What size pit
do you need?
It comes down to how many people you feed and how often. As a rough guide from what we build:

What's an
offset smoker?
The fire lives in its own firebox, off to the side. Heat and clean hardwood smoke pull through the throat, across the cook chamber and out the stack — so your brisket cooks low and slow in moving smoke, not over flame.
It's the standard pit in Central Texas. It's still uncommon in Canada. We're trying to change that.
